EPI 7: Matt & Music

On this week's episode of For Future Reference we have our first ever guest appearance! Our good friend Matt Horn comes on the pod to add his perspective and commentary on music, pop culture and politics. We have a lengthy discussion about our favorite summer hits, new music that's emerging and what we think about the evolution of some of our favorite artists.

THIS WEEK'S RECIPE: ROASTED VEGGIE AND SEARED STEAK SALAD

1 zucchini

1 summer squash

1 small red onion

1 red bell pepper

1 yellow bell pepper

Or whatever your fav veggies are

1 ½ pound rib eye steak

Salt, to taste

Pepper, to taste

1 bag mixed greens salad

For the salad dressing: Olive oil, to taste

Red wine vinegar, to taste

Salt, to taste

Pepper, to taste

PREPARATION

1. Preheat oven to 400 degrees. Cut zucchini and summer squash in half lengthwise. Remove the insides of the bell peppers and cut into large chunks. Remove the top and bottom from the red onion and slice horizontally into three pieces.

2. Place all veggies on a pan, salt and pepper to taste and drizzle with olive oil

3. Season the rib eye with salt and pepper.

4. Sear steak in a pan (cook for as long as you like, depending on how rare you like your steak)

5. While the steak cook, cook the veggies for 10-20 minutes depending on how you'd like the veggies cooked.

6. Remove steak and let rest for 10 minutes.

7. Slice the steak into strips.

8. Arrange vegetables and steak on a bed of mixed greens.

9. Drizzle olive oil, red wine vinegar, salt, and pepper over the salad.

10. Serve & enjoy!
